Ingredients
Chicken
- 4 lbs chicken leg quarters or thighs
- 2 tablespoons olive oil
Seasoning Blend
- 1 tablespoon smoked paprika
- 2 teaspoons garlic powder
- 2 teaspoons onion powder
- 1 teaspoon black pepper
- 1 teaspoon seasoned salt
- 1 teaspoon Cajun seasoning
- 1 teaspoon brown sugar
- ½ teaspoon dried thyme
Instructions
Step 1: Prep the Chicken
Preheat oven to:
375°F
Pat chicken dry with paper towels.
Rub with olive oil.
Step 2: Season
In a small bowl combine:
- smoked paprika
- garlic powder
- onion powder
- black pepper
- seasoned salt
- Cajun seasoning
- brown sugar
- thyme
Coat chicken generously on all sides.
Step 3:Ā
Place chicken on a wire rack over a baking sheet.
Bake:
45ā55 minutes
Or until internal temperature reaches:
165°F
Step 4: Crisp the Skin
For extra crispy skin:
Broil for:
2ā3 minutes
Watch carefully.
