Ingredients
- 3 large cucumbers
- 1 cup cherry tomatoes, diced
- ½ cup crumbled feta cheese
- ¼ cup red onion, finely diced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- ¼ teaspoon sea salt
- ¼ teaspoon black pepper
Instructions
Step 1: Prepare the Cucumbers
Slice cucumbers into 1½-inch thick pieces.
Using a small spoon, scoop out a little from the center to create a “cup.”
Step 2: Make the Filling
In a bowl combine:
- tomatoes
- feta cheese
- red onion
- parsley
- olive oil
- lemon juice
- salt
- pepper
Mix well.
Step 3: Fill the Cups
Spoon mixture into each cucumber cup.
Arrange on a serving tray.
Step 4: Chill and Serve
Refrigerate for 15–20 minutes before serving.
Serve cold.
