Garlic Parmesan Roasted Zucchini (Healthy & Delicious)

Ingredients

  • 3 medium zucchini, sliced into ¼-inch rounds
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon Italian seasoning
  • ¼ teaspoon black pepper
  • ¼ teaspoon sea salt
  • 1 tablespoon chopped fresh parsley

Instructions

Step 1: Preheat Oven

Preheat oven to:
425°F

Line a baking sheet with parchment paper.


Step 2: Season the Zucchini

In a large bowl combine:

  • zucchini
  • olive oil
  • garlic
  • garlic powder
  • onion powder
  • Italian seasoning
  • salt
  • pepper

Toss until evenly coated.


Step 3: Add Parmesan

Sprinkle Parmesan cheese over the zucchini.

Toss lightly.


Step 4: Roast

Arrange zucchini in a single layer.

Bake:
18–22 minutes

Until tender and lightly golden.

For extra browning, broil for 1–2 minutes at the end.


Step 5: Serve

Remove from oven.

Sprinkle with fresh parsley.

Serve immediately.
