🛒 Ingredients
- 12 large eggs
- ¼ cup mayonnaise
- 1 tablespoon Dijon mustard
- ½ teaspoon white vinegar
- ¼ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper, optional
- Paprika, for garnish
- Fresh chopped chives or parsley, for garnish
👩🏽🍳 Instructions
1. Boil the eggs. Place the eggs in a saucepan and cover with cold water by about 1 inch. Bring to a boil, cover, remove from heat, and let sit for about 12 minutes.
2. Cool them down. Transfer the eggs immediately to a bowl of ice water and let them cool for 5–10 minutes. Peel once completely cooled.
3. Prepare the eggs. Slice each egg in half lengthwise. Carefully remove the yolks and place them in a mixing bowl. Arrange the egg whites on a serving platter.
4. Make the filling. Mash the yolks until fine. Add mayonnaise, Dijon mustard, white vinegar, salt, black pepper, and cayenne. Stir until creamy and smooth.
5. Fill the eggs. Spoon the filling back into the egg whites, or use a piping bag for that pretty swirled look.
6. Garnish. Sprinkle with paprika and chopped chives or parsley.
7. Chill. Refrigerate for about 30 minutes before serving for the best flavor.

For easier peeling, eggs that aren’t extremely fresh usually peel better. An ice bath also helps stop the cooking process and makes peeling easier.
Want them extra creamy? Add another tablespoon of mayo. For a little sweetness, add 1 teaspoon sweet pickle relish. For extra tang, add a tiny splash more vinegar.
