The All McCall 🦞🐑 Lobster Tail & Garlic Lamb Chops with Loaded Mashed Potatoes

Ingredients

Lamb Chops

  • 8 lamb chops
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 teaspoon fresh rosemary, chopped
  • 1 teaspoon fresh thyme
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 tablespoon butter

Garlic Butter Lobster Tails

  • 4 lobster tails
  • ½ cup unsalted butter, melted
  • 4 garlic cloves, minced
  • 1 tablespoon fresh parsley
  • 1 teaspoon paprika
  • 1 tablespoon lemon juice
  • ½ teaspoon Cajun seasoning

Loaded Mashed Potatoes

  • 3 lbs russet potatoes, peeled and cubed
  • ½ cup butter
  • 1 cup sour cream
  • ½ cup heavy cream
  • 1½ cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 4 green onions, sliced
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Instructions

Step 1: Prepare the Potatoes

Place potatoes in a large pot.

Cover with water.

Bring to a boil and cook:

20–25 minutes

Until fork tender.

Drain well.

Mash potatoes.

Add:

  • butter
  • sour cream
  • heavy cream
  • cheddar cheese
  • salt
  • pepper

Mix until creamy.

Fold in half the bacon and green onions.

Set aside.


Step 2: Season the Lamb Chops

Pat lamb chops dry.

Rub with:

  • olive oil
  • garlic
  • rosemary
  • thyme
  • paprika
  • salt
  • pepper

Let rest:

15 minutes


Step 3: Cook the Lamb Chops

Heat a skillet over medium-high heat.

Add butter.

Cook lamb chops:

3–4 minutes per side

For medium-rare.

Cook longer if desired.

Remove and rest.


Step 4: Prepare the Lobster Tails

Using kitchen shears, cut down the center of each shell.

Pull the meat gently on top of the shell.

In a bowl combine:

  • melted butter
  • garlic
  • parsley
  • paprika
  • lemon juice
  • Cajun seasoning

Brush generously over lobster meat.


Step 5: Cook the Lobster

Bake at:

425°F

For 10–12 minutes

Or until lobster meat is opaque and tender.

Brush with more garlic butter before serving.


Step 6: Assemble the Plate

Spoon loaded mashed potatoes onto a serving plate.

Top with remaining bacon, cheddar cheese, and green onions.

Add lamb chops and lobster tails.

Drizzle any remaining garlic butter over the lobster.

Garnish with parsley.
