🥔 Loaded Mini Potato Bites
Crispy little potatoes smashed open and loaded with melted cheddar, turkey bacon, sour cream, and fresh chives. They’re basically loaded baked potatoes turned into bite-sized appetizers. 😂

🛒 Ingredients
- 1½ lbs baby gold or red potatoes, about 24
- 2 tbsp olive oil
- 1 tsp garlic powder
- ½ tsp onion powder
- ½ tsp smoked paprika
- ½ tsp seasoned salt
- ¼ tsp black pepper
- 1½ cups shredded sharp cheddar cheese
- 6 slices turkey bacon, cooked crispy and chopped
- ¾ cup sour cream
- ¼ cup fresh chives or green onions, finely chopped
- Optional: ranch dressing or hot sauce for serving
👩🏽🍳 Directions
Heat your oven to 425°F. Wash and dry the potatoes, then toss them with olive oil, garlic powder, onion powder, paprika, seasoned salt, and black pepper.
Spread them on a baking sheet and roast for about 25 minutes, or until they’re fork-tender.
Take the potatoes out and gently press each one with the bottom of a glass or measuring cup. Don’t completely flatten them—we want a little crispy potato cup.
Sprinkle each potato generously with cheddar and return them to the oven for 5–8 minutes, until the cheese is melted and the potato edges are golden and crispy.
Top each one with a small spoonful of sour cream, crispy turkey bacon, and fresh chives.
Serve them HOT. 🔥
⭐ Easy Eatz Expert Tips
Use small potatoes that are close to the same size so they cook evenly.
Don’t smash them too thin or they’ll fall apart. Just enough pressure to crack them open and create room for the toppings.
For extra-crispy potatoes, roast the smashed potatoes another 5 minutes before adding the cheese.
And don’t put the sour cream on until you’re ready to serve. We want hot crispy potatoes + cold creamy sour cream. 😮💨
🧊 Storage & Reheating
Store the potatoes without sour cream in an airtight container for up to 3–4 days.
Reheat at 375°F in the air fryer for 4–6 minutes or 400°F in the oven for about 8 minutes, then add fresh toppings.
