Ingredients

Oxtails

  • 4 lbs oxtails
  • 2 tablespoons vegetable oil
  • 1 large onion, sliced
  • 4 green onions, chopped
  • 4 garlic cloves, minced
  • 2 cups beef broth
  • 1 (15 oz) can butter beans, drained

Seasoning

  • 2 teaspoons allspice (pimento)
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon black pepper
  • 1 teaspoon salt
  • 1 teaspoon paprika
  • 1 teaspoon dried thyme
  • 1 Scotch bonnet pepper (whole)
  • 2 tablespoons browning sauce
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon brown sugar

Instructions

Step 1: Season the Oxtails

In a large bowl combine oxtails with:

  • allspice
  • garlic powder
  • onion powder
  • black pepper
  • salt
  • paprika
  • thyme
  • soy sauce
  • Worcestershire sauce
  • browning sauce
  • brown sugar

Cover and marinate:
At least 4 hours
(overnight is best)


Step 2: Brown the Oxtails

Heat oil in a large Dutch oven.

Brown oxtails:
3–4 minutes per side

Remove and set aside.


Step 3: Build the Flavor

Add:

  • onion
  • green onions
  • garlic

Cook:
3 minutes

Return oxtails to the pot.

Add:

  • beef broth
  • Scotch bonnet pepper

Bring to a simmer.


Step 4: Slow Cook

Cover and cook on low:
3½–4½ hours

Until the meat is fork tender.


Step 5: Add Butter Beans

Add butter beans during the last:
30 minutes

Allow gravy to thicken naturally.


Step 6: Serve

Serve over:

  • Jamaican rice and peas
  • white rice
  • cabbage
  • steamed vegetables
