Healthy Cucumber Tomato Salad (Light & Refreshing)
Ingredients
Salad
- 2 large cucumbers, sliced
- 3 cups cherry tomatoes, halved
- ½ medium red onion, thinly sliced
- 2 tablespoons fresh parsley, chopped
Dressing
- 3 tablespoons olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon lemon juice
- 1 teaspoon honey
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- ½ teaspoon garlic powder
Instructions
Step 1: Prepare the Vegetables
Wash and slice:
- cucumbers
- tomatoes
- red onion
Add to a large bowl.
Step 2: Make the Dressing
In a small bowl whisk together:
- olive oil
- apple cider vinegar
- lemon juice
- honey
- salt
- pepper
- garlic powder
Step 3: Toss the Salad
Pour dressing over vegetables.
Add parsley.
Mix gently until coated.
Step 4: Chill
Refrigerate for:
15–30 minutes
This helps the flavors come together.
Step 5: Serve
Serve cold as a side dish or healthy snack.
