Ingredients
Salad
- 1 lb shaved sirloin steak
- 2 large cucumbers, sliced
- 1 cup cherry tomatoes, halved
- ½ red onion, thinly sliced
- 2 green onions, chopped
- ¼ cup fresh cilantro, chopped
- 1 tablespoon olive oil
Steak Seasoning
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon black pepper
- ½ teaspoon salt
Avocado Cilantro Aioli
- 1 ripe avocado
- ½ cup plain Greek yogurt
- ¼ cup fresh cilantro
- 1 tablespoon lime juice
- 1 garlic clove
- 2 tablespoons water
- ¼ teaspoon salt
- ¼ teaspoon black pepper
Instructions
Step 1: Cook the Steak
Season steak with:
- garlic powder
- onion powder
- paprika
- salt
- pepper
Heat olive oil in a skillet.
Cook steak:
4–5 minutes
Set aside.
Step 2: Make the Aioli
Add to a blender:
- avocado
- Greek yogurt
- cilantro
- lime juice
- garlic
- water
- salt
- pepper
Blend until smooth.
Step 3: Build the Salad
In a large bowl combine:
- cucumbers
- tomatoes
- red onion
- green onions
- cilantro
Top with cooked steak.
Step 4: Finish
Drizzle avocado cilantro aioli over the salad.
Toss lightly and serve.
